Chef Davide Palluda was born in 1971 in Canale, where he lives and works.
After his professional studies at the Barolo Hotel School, he gained training experiences at the most prestigious Italian and European kitchens. In 1995, with his sister Ivana, he opened the "All Enoteca" restaurant, annexed to the Regional Enoteca del Roero, based in Canale. In 2000 he was judged the best young cook of the year by the Espresso guide. Also in 2000 it received the Michelin star, which he has always kept thereafter. He was the architect of the enhancement of the civilization of the Roero table and is recognized as one of the best Italian chefs.

Davide PalludaDavide Palluda's philosophy of taste also finds consistent application in the transition from the restaurant to the DP laboratory, opened in 2006 together with his wife Annalisa. Here, raw materials, technology and research merge and submit to the objective of maintaining the freshness and delicacy of the taste and primary aromas. With two inspiring reflections as old as man: the beautiful idea of one season thinking of the other and the concept / dream of preserving quality over time.
